Griddled Aubergine & Garam Masala Wrap

Griddled aubergine wrapA yummy improvised lunch using aubergines, frozen wraps and Greek yoghurt (or plain yoghurt)…

Ingredients
1 aubergine, sliced and sprinkled with sea salt
Greek Yoghurt
Garam Masala powder
Paprika powder
Oil for frying (I use grapeseed)

 

Slice the aubergine lengthways into 5mm thick slices. Fry in generous amount of oil (approx. 4 minutes either side). Lay out in a wrap, sprinkle with approx 1 tsp of Garam Massala spice mix, spoon on a few dollops of greek yoghurt, and finally sprinkle with Paprika. Voila!
